Craving Mumbai-style vada pav but want a healthier twist? Try making it in an appe pan—crispy, golden, and just as delicious!
Ingredients:
For the Vada (Potato Filling):
* 6 medium potatoes, boiled & mashed
* 2 tbsp ginger-garlic-green chili crushed
* 5-6 curry leaves, chopped
* ½ tsp turmeric powder
* ½ tsp red chili powder
* ½ tsp garam masala
* ¼ tsp hing
* 1 tbsp coriander leaves, chopped
* Salt to taste
* 1 tsp lemon juice
For the Batter:
* 2 cups besan (gram flour)
* 1 tsp red chili powder
* ½ tsp turmeric powder
* 1 tsp oil
* 1 tsp carom seeds (ajwain)
* Salt to taste
* Water (as needed)
For Serving:
* Pav buns
* Dry garlic chutney & green chutney
* Butter or oil (for toasting pav)
* Fried green chilies (for extra spice!)
Instructions:
🔹 Step 1: Prepare the Potato Filling
1. Heat oil in a pan, add hing and curry leaves, sauté for a few seconds.
2. Add crushed ginger-garlic-green chili and cook until fragrant.
3. Mix in turmeric, red chili powder, garam masala, and salt. Stir well.
4. Add mashed potatoes, combine everything, and turn off the heat.
5. Stir in lemon juice and coriander leaves. Let the mixture cool.
6. Shape into small, round balls.
🔹 Step 2: Prepare the Batter7. In a bowl, mix besan, red chili powder, turmeric, ajwain, and salt.8. Add oil and slowly whisk in water to make a thick, smooth batter.
🔹 Step 3: Cook in Appe Pan9. Heat an appe pan, add a few drops of oil to each cavity.10. Dip each potato ball in the batter, coat well, and place in the pan.11. Cover and cook on low-medium heat for 3-4 minutes until golden brown.12. Flip carefully and cook the other side for another 3-4 minutes until crisp.
🔹 Step 4: Assemble the Vada Pav13. Toast pav buns with butter until golden.14. Spread dry garlic chutney & green chutney inside.15. Place the vada inside the pav and press gently.16. Serve with fried green chilies on the side.
